Adzuki Bean Burgers
Ingredients
- 2 cups cooked and drained adzuki beans
- ½ grated onion
- ¼ cup toasted sunflower and pumpkin seeds
- 1 tbsp tamari or shoyu (natural soya sauce)
- 1 tbsp dried or fresh sage, coriander or herbs of your choice (leaves only) finely diced
- Pinch of sea salt and pepper (optional)
- Buckwheat flour
- Organic sunflower frying oil
Instructions
- Mash the adzuki beans in a bowl and add the onion, seeds, tamari or shoyu and some fresh or dried sage or herbs of your choice and mix well.
- Next add enough flour to bind the mixture together but just enough so it remains slightly sticky.
- Form into burger shapes (tip: flour your hands so the mixture does not stick to them)
- Heat a heavy bottomed pan and fry the burgers in a generous amount of hot oil in a frying pan for 3-4 minutes on each side.
- Serve with baked pumpkin slices on top and drizzle with a reduced sauce.

Quick Tip – purchase canned organic beans.
