Southwest Kale Salad
This simple, yet delicious, kale salad is a quick and easy way to spice up your midday meal!

Ingredients
- Salad:
- 3 bunches of kale, stems removed chopped
- ⅓ cup of black beans
- ½ cup corn
- ¼ cup pepitas
- ⅓ pint cherry tomatoes
- salt and pepper to taste
- Dressing:
- 1.5 tbsps lime juice
- 3 tbsps sherry vinegar
- 2 tbsps olive oil
- 1¼ tsp agave nectar
- 1.5 tbsp chipotle peppers
- ½ bunch cilantro
- ⅓ tsp dijon mustard
Instructions
- Mix all the dressing ingredients and blend them in a blender. Set aside in a container.
- Mix all the salad ingredients in a salad bowl and add the dressing. Enjoy!
