The most important meal of the day should be tasty, filling and nutritious. Don’t worry, you do not have to spend the majority of your morning in the kitchen to make these perfect day starters. Here are some vegan breakfast ideas that are easy and delicious.
1. Oatmeal
A warm bowl of oatmeal is a go-to vegan breakfast favorite. It’s fast, easy and nutrient-dense. Cook up a bowl of old-fashioned oats and top it with brown sugar (or sugar-free syrup), blueberries, strawberries, nuts and seeds for a hearty start to your day. If you want to ensure a more relaxed morning, prepare your oats the night before. In a jar, mix together a half-cup of oats, a half-cup of plant-based milk, one tablespoon of maple syrup and a half to three quarters tablespoon of chia seeds. To add some more flavor, try adding vanilla extract, a scoop of peanut butter, protein powder or cinnamon. Let it sit overnight in your fridge and wake up to a perfect breakfast.
2. Bagel
A bagel is a song in a breakfast-lover’s heart. There are several bagel flavor combinations for different morning cravings. Want something savory? Have an everything bagel with Earth Balance, tomato slices and onions. Are you in the mood for something on the sweeter side? Try a blueberry bagel with Tofutti cream cheese sprinkled with a little (or a lot) of cinnamon.
3. Tofu Scramble
This plant-based breakfast item may sound fancy, but it only takes minutes to put this meal together. Start by crumbling some firm or extra firm tofu into a pan. For a loaded tofu scramble, add peppers, onions, broccoli, mushrooms, spinach and beans. Stir it all up in the pan with turmeric, nutritional yeast, garlic powder, black pepper and salt. Eat it as is, or scoop it into a few small tortillas with some salsa and Daiya cheese for a quick breakfast taco.
4. Cinnamon Rolls
Good news; a lot of cinnamon rolls are accidentally vegan! Just go to the refrigerated section where they keep the goods and double check the ingredient list. If you are feeling a little DIY, Minimalist Baker has a great recipe for cinnamon rolls.
5. Muffins
Banana muffins can be an at-home or on-the-go vegan breakfast. This recipe is easy and full of healthy ingredients. They are incredible plain, but I recommend topping it with some nut butter for even more flavor and protein.
6. Smoothies
Sipping on a cold smoothie is a fantastic way to wake you and your body up in the morning, especially during the hotter months. Blend together some non-dairy milk with any fruit and you will have a creamy glass of goodness. One of my favorites is mango, peach, banana and almond milk for an icy tropical flavor combination. 7. Toast
This vegan breakfast idea is quick and simple, but toast-ally still delicious. Top one slice with mashed avocado, garlic powder, black pepper, salt and red pepper flakes. Slather another with peanut butter or almond butter, sliced banana, chia seeds and flax seeds. Cover another slice with Earth Balance, sliced avocado and black pepper. Dress another slice in Tofutti cream cheese, sliced apple and cinnamon.
8. Pancakes and Waffles
These are perfect for a morning sweet tooth. You can make your own pancakes with this recipe from Sweet Simple Vegan and waffles with this recipe by Art of Dessert. If you like your toaster more than kitchen tools you’re in luck! Van’s has pancakes and a few different waffles you can heat up and cover in syrup.
9. Chia Seed Pudding
Chia seeds are packed with antioxidants, fiber and protein, which make them a great and nourishing choice for your morning. In a bowl, stir together a half-cup of chia seeds, three cups of your favorite non-dairy milk, one to three tablespoons of maple syrup, a half-teaspoon vanilla and a little cinnamon. Stick your bowl in the fridge for about three hours and stir it every so often. You can also leave it in the fridge overnight.
10. Nice Cream
