Spiced Cauliflower
Ingredients
- 1 head cauliflower, cut into florets
- ½ red onion, cut into large chunks
- 1 red bell pepper, cut into large chunks
- 2 teaspoons black mustard seeds
- 2 teaspoons sambar masala powder
- 1 teaspoon cumin seeds
- 1 teaspoon turmeric
- 3 teaspoons olive oil
- ½ inch piece ginger, grated
- 2 cloves garlic, grated
- Salt and pepper to taste
Instructions
- Preheat oven to 350 F.
- In separate bowls toss the onion and red bell peppers each with 1 teaspoon olive oil, and a healthy pinch of salt, and pepper.
- Roast both at 350 F. The peppers will take 15 to 20 minutes, and the onions will take 20 to 30 minutes.
- Remove from oven when brown and tender and set aside. Keep warm.
- Increase the oven to 450 F.
- Mix all spices and seeds together to combine.
- Toss the cauliflower with remaining olive oil, ginger, garlic, the spice mixture, and healthy pinches of salt and pepper.
- Spread out on a lined sheet pan and roast the cauliflower until the edges just begin to brown, 10 to 12 minutes.
- In a mixing bowl combine peppers, onions, and cauliflower. Toss together and serve.
