Make Hash Browns Lickety-split and Mix Up Your Breakfast Routine

Take a break from your same old breakfast routine and spoil yourself with warm, crispy hash browns before the work day!

Ingredients
- 6 small red potatoes
- 1 cup spinach
- 4 small tomato
- 2 tsp olive oil
- chopped parsley
- chopped thyme
- chili pepper powder
- Mrs. Dash's salt-free Original Blend
Instructions
- Bring a small pot of water to boil.
- If desired, peel potatoes.
- Dice and place the potato pieces in the pot of water.
- Bring to a simmer.
- While the potatoes are boiling, chop four small tomatoes and place them aside with the spinach.
- After approximately 10 minutes, the potatoes should be soft enough to pierce with a fork but not falling apart.
- Drain the water and set the pot aside.
- Put the frying pan on medium low heat with one teaspoon of oil.
- When the pan is heated, add about ⅓ of the potatoes.
- Sprinkle parsley, chili pepper powder, thyme, and Mrs. Dash onto the potatoes and saute until they begin to brown.
- Put your hash browns aside.
- Add the rest of the olive oil to the pan.
- Saute the tomato and spinach until the tomatoes soften.
- Put potatoes and spinach on plate and serve!
Notes
Play around with different spices, using a different kind of potato, or using a different kind of oil.
Consider adding a few chopped onions and extra chili powder for more zing or using sweet potatoes for a sweeter option.
