Ingredients
Sauce:
1¼ cup of pineapple juice
½ cup rice vinegar
⅓ cup agave nectar
½ tablespoons tomato paste
⅓ tablespoons tamari
2½ tbsp arrowroot (mix with ¼ cup of water)
Salt and pepper to taste
Veggies:
1¼ cups of carrots, cut on bias
1¾ cups of broccoli florets
¾ cups onion, large chunks
⅔ cups bell peppers, large chunks
⅔ cups snow peas
2 cups yukon gold potatoes, 1 inch cubes
1 tbsp olive oil
Instructions
Add all sauce ingredients in a small pot on low heat. Add salt and pepper to taste. Bring to a slight boil then thicken the sauce with arrowroot.
