Sweet and Sour Veggies
 
 
This quick recipe packs tons of sweet and sour flavors into your favorite veggies, making them an awesome yet easy side dish. Add a vegan source of protein, some rice, quinoa, or another grain to make it a healthy and hearty entree!

Ingredients
  • Sauce:
  • 1¼ cup of pineapple juice
  • ½ cup rice vinegar
  • ⅓ cup agave nectar
  • ½ tablespoons tomato paste
  • ⅓ tablespoons tamari
  • 2½ tbsp arrowroot (mix with ¼ cup of water)
  • Salt and pepper to taste
  • Veggies:
  • 1¼ cups of carrots, cut on bias
  • 1¾ cups of broccoli florets
  • ¾ cups onion, large chunks
  • ⅔ cups bell peppers, large chunks
  • ⅔ cups snow peas
  • 2 cups yukon gold potatoes, 1 inch cubes
  • 1 tbsp olive oil
Instructions
  1. Add all sauce ingredients in a small pot on low heat. Add salt and pepper to taste. Bring to a slight boil then thicken the sauce with arrowroot.
  2. Blanch carrots and broccoli. Boil potatoes until they are cooked but be careful not to overcook. Lightly sauté the onion chunks and bell peppers with olive oil. Add the blanched carrots, broccoli and potatoes then add the sweet and sour sauce. Mix well. Serve with your favorite type of rice or quinoa.
