Kale and Quinoa Salad

A delicious blend of fruits, vegetables, and seeds to spice up a kale salad. Feel free to change the amounts to decrease or increase the serving size!
Serves: 4
Ingredients
For the salad and toppings
  • 4 cups of chopped kale
  • 1 cup of quinoa
  • 1 green apple, finely chopped
  • 1 yellow pepper, finely chopped
  • Dried cranberries
For the vinaigrette dressing
  • 3 tbsp of Dijon mustard
  • 3 tbsp of apple cider vinegar
  • 3 tbsp of white vinegar
  • 2 tsp of lemon juice
Instructions
For the dressing
  1. Whisk together the Dijon mustard, apple cider vinegar, white vinegar, and lemon juice.
After the dressing is made
  1. Cook the quinoa by simmering one cup of rinsed quinoa with two cups of water for 25 minutes. Set aside to cool.
  2. Combine quinoa, yellow peppers, and green apple.
  3. Chop kale to desired bite sized pieces.
  4. Top the quinoa mixture with the kale along with the dried cranberries and dressing.
  5. Eat up and enjoy!
