Quinoa, Black Bean, and Veggie Burritos

An easy burrito recipe filled with nutrition and will satisfy your mexican craving!
Ingredients
  • 1 cup of quinoa
  • 1 cup of black beans, rinsed
  • 1 cup of corn
  • 2 tomatoes, diced
  • 1 zucchini, diced
  • ½ cup of diced peppers
  • 1 avocado, diced
  • 1 lime (squeezed for juice)
  • 1 teaspoon garlic powder
  • 1-2 teaspoons chili powder (depending on how spicy you want it!)
  • salt and pepper, to taste
  • whole what tortillas
Instructions
  1. Simmer quinoa in two cups of water for 25 minutes.
  2. Once quinoa is cooked and has absorbed all of the water, transfer to a large skillet.
  3. Add a small amount of water to bring the quinoa back to a boil.
  4. Stir in the diced tomatoes, zucchini, peppers, corn, black beans, and all of the spices.
  5. Simmer until mixture is thick and heated through.
  6. Squeeze the lime into the mixture and stir
  7. Now that your delicious burrito mixture is done, spoon a desirable amount into a tortilla.
  8. Top with avocado (what a perfect touch!) and fold your burrito.
  9. Enjoy and make sure not to leave any left on your plate!
