Quinoa, Black Bean, and Veggie Burritos
- 1 cup of quinoa
- 1 cup of black beans, rinsed
- 1 cup of corn
- 2 tomatoes, diced
- 1 zucchini, diced
- ½ cup of diced peppers
- 1 avocado, diced
- 1 lime (squeezed for juice)
- 1 teaspoon garlic powder
- 1-2 teaspoons chili powder (depending on how spicy you want it!)
- salt and pepper, to taste
- whole what tortillas
- Simmer quinoa in two cups of water for 25 minutes.
- Once quinoa is cooked and has absorbed all of the water, transfer to a large skillet.
- Add a small amount of water to bring the quinoa back to a boil.
- Stir in the diced tomatoes, zucchini, peppers, corn, black beans, and all of the spices.
- Simmer until mixture is thick and heated through.
- Squeeze the lime into the mixture and stir
- Now that your delicious burrito mixture is done, spoon a desirable amount into a tortilla.
- Top with avocado (what a perfect touch!) and fold your burrito.
- Enjoy and make sure not to leave any left on your plate!
