Vegan or not, many parents’ morning routines are so jam-packed with getting themselves and their children ready, they don’t always have time for a nutritious and filling breakfast. It’s so easy to hand the kiddos a Pop-Tart and a juice box before rushing everyone out the door, without even thinking how the nutritional content, or lack thereof, of the “most important meal of the day” will impact them in the long run. Why not add a smoothie to that routine instead? This is one of the many quick fixes I have adopted at home since becoming vegan. It’s a quick morning fix, and I can even add in a scoop of nutritious vitamins when I feel anyone is lacking. Not only does it help me out with managing seven kiddos, but a smoothie makes for a great snack during the week too. Simply take note of what your family enjoys: bananas, apples, cucumbers, strawberries, honeydew melon, pears, etc. All fruits and veggies can be used, minus a few, such as potatoes and corn. If you have a blender and a juicer, you can even juice some fruit and/or veggies and use that as your smoothie base instead of coconut/hemp/almond/rice milk or ice cubes. After finding out your family’s favorites, just grab a few extra while you are grocery shopping. Chop them into small cubes/slices and place in a plastic baggy or container and freeze. The next morning, grab the desired amount from your container and place in a blender. Add the juice or vegan milk of choice and blend away. Once it’s as smooth as your morning routine, pour it in a cup and drop in that straw. It’s super easy, fast, and way better than a Pop-Tart! This is a great plan for those busy mornings and easy enough for the kiddos to put together while you pull your hair back and grab your jacket. Here is one of my favorite recipes I still use my family to power us through those busy mornings…
- 1 bunch celery
- 1 cup frozen mango slices/cubes
- 1 cup frozen pineapple cubes
- 1 frozen banana, sliced
- 1 tablespoon cinnamon
- First, juice the celery in a juicer. If celery isn't in the fridge, try juicing a cucumber or some orange juice and add a splash of that instead. If that's too much fruit for you, omit the veggie/fruit juice and add some vegan milk instead.
- Next, place everything in the blender and blend! This creates a wonderful and sweet blend to wake up your morning.
